Natural Gourmet Dining Essensia The Pure Essence of Taste

Our new culinary concept to Miami Beach, Essensia restaurant and lounge embodies the simplicity and elegance of natural gourmet dining at The Palms Hotel & Spa.  Under the direction of our new Executive Chef Frank Jeannetti, Essensia features worldly fare in a vibrant and sophisticated style. With an established career launching some of South Florida’s most successful dining establishments and a long track record creating exceptional green and organic dishes, Jeannetti’s new menus at Essensia and throughout the hotel’s food and beverage outlets emphasize flavor and simplicity by blending local, seasonal, and organic ingredients from local purveyors to create what has been coined as “the pure essence of taste”. 






Essensia features a 65-seat indoor dining room plus al fresco seating for another 120 under The Palms' covered terrace and poolside deck. Open daily for breakfast, lunch, and dinner. Our summer 2010 dinner menu highlights include:

GRILLED GIANT PRAWNS WITH MANGO RICE
Chili spiced grilled giant prawns, local organic mangos, Basmati rice, hand-picked herbs and ginger lime chipotle aioli.

THREE PEPPER CRUSTED NATURAL ANGUS BEEF TENDERLION
Three potato salad, grilled white asparagus and local blueberry Maytag blue cheese.

CILANTRO CRUSTED MAINE DIVER SCALLOPS
Unfried green tomatoes, Summer squash ribbons and Bermuda onion jam.

100% Sustainable, Organic & Biodynamic Wines

Complementing the new menus is Essensia’s exclusive wine list, committed to being completely sustainable, organic, or biodynamic and an innovative Indulgence bar menu with interactive wine voyages where guests can experience three 2oz. pours that have something in common such as variety, region, vintage or maker and signature cocktails made from fresh ingredients and organic spirits.
